Healing soup recipe: Carrot, coconut, ginger soup
Made this delish soup last night as it was cold and I had a tinge of a sore throat. Kicked it out and warmed me up!
Recipe (all organic ingredients, some from our farm)
5 Large carrots sliced
5 cherry tomatos
A handful of Macadamia nuts
1 large finger of ginger
1 medium finger of tumeric
1/2 squeezed lemon
1 tsp lemon zest
3 pieces of garlic
2 Tbsp coconut oil
1 qt chicken broth
Pinch of salt
3 pinches of black pepper
Place all ingredients in vitamix blender and blend for 3-5 minutes or until it is warm.
Here it is garnished with sour cream and basil.
If you have nasal congestion and chills, garnish with chopped green onion instead.
